A seasoned hospitality professional Toni Miloš spearheads a Food & Beverage team at the Martinis Marchi Heritage Hotel in the Maslinica Bay on the Island of Šolta. Toni also partakes in recruitment and training as an active member of the HR Department.
He embarked on his twenty-year long journey in the hotel industry following his graduation from the Split Hospitality School. After working for a number of à la carte restaurants, he joined the HL Dvorac team at the Martinis Marchi restaurant in 2008 as a sous-chef. Two years later he took over as a chef along with being responsible for quality control and the overall F&B department supervision. Toni was appointed as Food & Beverage Manager in 2015.
The Martinis Marchi restaurant offers traditional Mediterranean dishes with a modern twist in preparation & presentation. The restaurant’s philosophy relies on top seasonal ingredients mainly produced and sourced locally to provide a signature Mediterranean experience. The prestigious gastro guide Gault&Millau awarded the restaurant with a high score of 15.5 points and presented it with the Best Service Award in 2022 while the Austrian Falstaff included Martinis Marchi in the top three Croatian restaurants.
Toni upskills his culinary know-how and experience through continuing professional development and collaborates actively with renowned European restaurants. Right now he is a guest chef at a well-known Italian boutique hotel recognized for its extraordinary gourmet experience. His strong commitment, enthusiasm and love for his job have become a source of inspiration to aspiring chef generations. Martinis Marchi’s parent company HL Dvorac continues its successful cooperation with hospitality schools in the Split-Dalmatia County where the company hires students upon graduation.
Currently several “students” are full team members in their restaurant and some have already assumed leading roles within the company. The company HL Dvorac is an active member and a partner in the project focused on the establishment of the Regional Hospitality Center of Competency run by the Split School of Tourism and Hospitality.
